This winter might not be so bad if we actually had a winter with pretty white drifts of snow. Instead, it's been cold. So very, very cold. We've been cooped up in the house and missing the sunshine. So, it seemed like a perfect day to make something lemony. Lemons just smell like summer. Fresh, bright and they even look like little suns.

As it happens, I also volunteered to bake for a bake sale at the school. You know what that meant? I wouldn't be tempted to eat them all! What I did not plan on was how much the husband would like these light and lemony cake cookies. Thankfully, I had doubled the recipe so there was plenty to go around.

I should have known he would like them. He seemed too eager when I asked him to pick up the cake mix and cool whip at the grocery store.

The smell of the cake mix made me feel a little happier. I decided to make these because I love lemon bars. The thing is, I've never made lemon bars. They look too complicated and have a lot of steps; never mind having to grate lemons.

These cookies have only four ingredients! The eggs and powdered sugar I already had on hand which makes think I need to keep lemon cake mix and cool whip in the house at all times. I could make them whenever I wanted to make them.

Since the main ingredients are cool whip and cake mix, I thought using the paddle attachment on my mixer would make them airy. That's a thing, right?

This batter is as thick as my middle. I'm glad I didn't use a hand mixer.

Unlike lemon bars that have a crust, these little lemon awesome-cakes just have to be rolled in powdered sugar. If you are fancy, use confectioners sugar.

This batter will spread out fairly well on the cookie sheet. This time, I remembered to space them out. Last time I made cake batter cookies, they spread out so much I should have just made a cake.

While I waited for them to come out of the oven, I used canva to create a design then Avery to make and print labels on my HP printer. I did this all from my iPad. Wireless makes life so much easier. I even impressed a few moms at the bake sale. I may have imagined it.

Tasty Lemony Cool Lemon Bar Cookies + a printable

Lemony Cool Lemon Bar Cookies

  • One box of lemon cake mix
  • One 8oz tub of Cool Whip
  • One egg
  • 1/2 - 1 cup powdered sugar to roll the cookies in
  1. Preheat oven to 350 degrees
  2. Blend cake mix, cool whip, and the egg together
  3. Roll dough into balls and then in the powdered sugar
  4. Bake for 8 - 10 minutes. Edges should be slightly brown
