Easy, Instant Apple Crisp, the perfect recipe for fall

My oldest is not a big fan of food. When he discovers something he really likes, I try to make it or buy it for him. In fact, if it wasn't for him, I would have never learned how to make sweet potato pie. His latest obsession is apple dumplings.

Last year, I took the kids to Patterson's Fruit Farm on a whim. It was here he tried his first apple dumpling. He hasn't had one since. When we went this past weekend, apple dumplings are pretty much all he hoped to get from the trip. But, the bakery had sold out by the time we made our way there. Before you feel bad, he left with a half dozen of fresh, hot apple cider doughnuts.

When we got home, he was still looking a little sad. I wasn't about to make apple dumplings. What I could make was apple crumble. Apple crumble is so easy - oats, brown sugar, cinnamon, butter, and apples.

Looking through my cupboards, all I could find was instant oatmeal. Not just any old instant oatmeal but brown sugar and maple syrup oatmeal. I started chopping apples.

I debated a long while about peeling the apples. Well, in the amount of time it took to realize it was a whole lot of peeling. I was in a mini binge session when I decided to bake and wanted to get back to it. I decided against peeling - all of us can use the fiber.

In retrospect, I should have peeled them. It's not that it tasted bad, but the crunch of the peel interrupted my chewing.

Butter and brown sugar are such happy flavors together. When it came time to make the topping, I didn't melt the butter all the way through. Mainly because I was rushing, but also because it's not that big of a deal. You really can't go wrong once it's all said and done.

This is where I should be sharing a photo of this and the vanilla ice cream I ate with it, but I ate it before I could get the camera out. Just know it looked and tasted amazing.

Easy, Instant Apple Crisp
Easy apple crisp made with instant oatmeal
Ingredients
  • 1/2 cup flour
  • 2 - 3 packages Instant oatmeal
  • 3/4 cup + 2 tablespoons Brown Sugar
  • 1/2 tablespoon Cinnamon
  • 1/2 stick melted + 2 tablespoons Butter
  • 4 - 5 medium Apples
Instructions
Preheat oven to 350 degreesPeel, core, and cut apples. Toss apples with two tablespoons of brown sugar and cinnamon. Place in a buttered baking pan. Optional: top with two tablespoons of unmelted butter.In a sperate bowl, mix together oatmeal, flour, and brown sugar. Add butter and stir.Top apples with mixture and bake for 40 mins.
