Yes, Bacon Jam.
Bacon Jam is the brainchild of Chef Josh Henderson who started Skillet Street Food in Seattle out of an Airstream.
Being that I am not from Seattle, I had to dig deep into the blogs of the area to find that this street food vendor is pretty popular and from the looks of the menu, I would consider a trip to Seattle for a taste!
This food truck is famous for their burger.
Bacon Jam, as described by the website, is:
a big bunch of really, really good bacon and render it down...add a bunch of spices, onions, etc. and let it simmer for about 6 hours, give it a quick puree, blast chill it...take a left turn, and end up in pure bacon heaven.
Wondering what you do with it besides slathering it on a burger? Never fear - they have a section on their website dedicated to recipes and even allow you to submit your own. From scallops, to ribs and grilled cheese to chicken all the recipes are easy to make.
I went a more traditional route with my dish and made an egg sandwich. Boring? Maybe. But, not with bacon jam!
I also made killer grilled cheese with turkey and bacon jam. Sorry, no pictures but you better believe it was uber tasty. The Husband loved it and is requesting to try other flavors like Skillet Fennel & Black Pepper Bacon Spread. I am thinking the Pumpkin Sauce (any of them) would be right up my alley (or skillet).
I wonder... what else I can make with this bacon awesomeness in a jar? Ideas?
