I love jambalaya! The rice, the tomatoes, the peppers, the sausage, the shrimp and the old bay. I hate... chopping all the ingredients and then waiting all day. So...
My Cheat Jambalaya
- Rice
- 1 can of Ro-Tel
- 1 large can of diced tomatoes
- Tomato paste - to taste
- Salt & pepper
- Tabasco
- Old Bay Seasoning
- shrimp, kielbasa and sausage
- Several jars of salsa (my *all time* favorite - Mrs Renfro)
- For each jar of salsa - fill that empty jar with rice and then water (i.e. 2 jars if salsa = 2 jars full of rice followed by 2 jars of water)
- Bring all ingredients, except shrimp, kielbasa and sausage, to a boil and then simmer
- Add to all that: shrimp, kielbasa and sausage (I do fry the kielbasa and sausage a little before adding it to the simmering pot for a little texture but the shrimp I don't even bother to thaw... into the pot it goes)
