What goes best with grilled cheese? Tomato soup of course!



Tomatoes are a pretty big deal in our household. From fresh to canned, I cook with them often. When I was asked to do a review for Tuttorosso Tomatoes it was easy to say, "yes!" because I use them in my cooking already.
Tuttorosso Tomatoes are always taste fresh and full of flavor, never salty.


One of my favorite recipes of all time is tomato soup. It is one of the few soups I can make and it takes no time at all.

I'm pretty picky when it comes to tomato soup. It has to be creamy and I need texture!


When I make this for the family, I use two large cans but since I was making it for a party I ended up using the liquid from the peeled plum tomatoes and using the tomatoes in my grilled cheese. I also added more cream cheese to get the consistency I wanted. The recipe below is perfect for 4 to 6 bowls.

I love the taste of basil and Tastefully Simple has a Dried Tomato & Garlic Pesto Mix that is my favorite seasoning. You can substitute fresh garlic and basil in the recipe for this seasoning blend but if you have a chance to order some - do it.

As you can see from the photo it is pretty chunky compared to traditional tomato soup. If you prefer a smoother soup, you could always blend it in the blender till smooth but I wanted something a little heartier. Spring in Ohio is still chilly and this is a great soup for a light meal.


Tasty Tomato Soup

  1. 12 oz can Tuttorosso Crushed Tomatoes
  2. 12 oz can of Tuttorosso Diced Tomatoes
  3. 14.5 oz can of Beef, Chicken, or Vegetable Broth
  4. 8 oz of cream cheese, low fat or full fat
  5. 4 tablespoons of Dried Tomato & Garlic Pesto Mix or 
    • substitute 1/4 cup of fresh basil and 1 teaspoon of garlic powder
  6. Salt and pepper to taste
    • Combine canned tomatoes, broth, and herbs in a pot and simmer on medium heat until it starts to boil. 
    • Cut cream cheese into small squares (for faster melting) and add to soup, stirring occasionally
