Despite the reminder at the start of the week, I still forgot that I wanted to bake for the school fall festival. As I scanned pinterest for easy ideas, in the early morning hours the day of, I came across a whole lot a of candy corn inspired treats including a Chex mix one.
I hate candy corn but love check mix. I really think Chex is the best cereal. I've never actually had a bowl for breakfast but I do love a good Chex mix (here and here).

I switched to look for recipes on the Chex site and knew I had to make something with apples and now they have Apple Cinnamon Chex! Everyone is making pumpkin and candy corn, I'm going to do apple!
However, I could not find the Apple Cinnamon Chex at the grocery store but they did have a vanilla flavor so that made up for not having the flavor I wanted.

Finding the freeze dried apples posed another challenge because I was shopping in a different Giant Eagle then I usually do.
It's funny how you get use to one store and you go to another and it seems overwhelming. The one I like is smaller and everyone is so friendly and they know our names! I don't like going to another store. A helpful employee offered assistance but was actually no help at all. He could not tell me where the apples were located. And, he did not know our names.

I got the cereal, brown sugar, apples and headed home wondering if this would work. Since the plan was to use the apple flavored Chex I forgot to grab apple concentrate when I could not find the cereal, hooray for applesauce. The recipe is a combination of several recipes and the next time I make it I'm going to drizzle melted vanilla chocolate over it while it is drying. It'd be like apple pie à la mode.
Since this was a last minute treat I did not make labels for my awesome apple pie treats. I should have because putting them in Halloween themed bags made it hard to tell what was in it. I did have a few moms I know tell me that they liked it and likened the goody to being addictive, like crack.
I'm finishing off my second handful writing this, no way I was giving it all to the bake sale.
APPLE PIE CHEX MIX
Ingredients
1 cup brown sugar1/2 cup apple sauce
1 stick of butter
2 tablespoons vanilla
2 tablespoons cinnamon
3/4 to 1 cup freeze dried apples (or one bag of sun-maid apples)
1 box Cinnamon Chex® cereal (or Apple Cinnamon if you can find it)
1 box Vanilla Chex® cereal
Directions
- Combine brown sugar, applesauce, vanilla, and butter then microwave for 4 mins, stirring after 2 mins.
- Coarsely chop freeze dried apples. (they're expensive - chop them up!)
- In a large microwavable bowl, mix 1/2 a box of the cereals and 1/2 the apples.
- Pour 1/2 the butter mixture over cereal mixture and mix gently.
- Microwave uncovered on High 5 minutes or until mixture begins to brown, stirring every few minutes.
- Spread on wax paper to cool.
- Repeat steps 3. and 4. with the rest of the cereal (unless you can fit all the cereal in your biggest bowl that fits in your microwave)
